摘  要:共轭亚油酸是十八碳共轭二烯酸的多种位置异构体和几何异构体的总称,少量天然存在于多种动植物脂肪中。由于其中的某些异构体具有抗癌、抗动脉粥样硬化、参与脂肪代谢及增强机体免疫力等有益生理活性,能被广泛应用于食品、医药、保健品、化妆品等领域,故其合成方法,特别是将天然不饱和脂肪酸改性制备共轭亚油酸的方法近年来受到关注。该文主要介绍了蓖麻油脱水、碱催化异构、金属催化异构和生物合成等将天然不饱和脂肪酸改性制备共轭亚油酸的进展,特别关注各种方法对获得有益生理活性成分的影响,也对共轭亚油酸在食品和药物以外的应用给予展望。Conjugated linoleic acids(CLAs)are a group of positional and geometrical isomers of conjugated octadecadienoic acids,which are naturally and minimally existed in multiple animal fats and vegetable oils.As is shown to inhibit carcinogenesis and atherosclerosis,participate in fat metabolism and enhance immune function,CLAs have been widely applied in food,pharmaceutical,health care,cosmetics and many other fields.Chemical modification methods,therefore,to prepare CLAs from natural unsaturated fatty acids have attracted more and more attention nowadays.In this paper,combined literature reports with our previous research,several methods to synthesize CLAs from natural unsaturated fatty acids,especially from linoleic acid,are briefly summarized,including mainly the advance in dehydration of ricinoleic acid in castor oil,alkali-or metal-catalyzed isomerization of linoleic acid,and biosynthesis.The introduction is focused on how to obtain CLA isomers with beneficial physiological functions as more as possible,and the potential application of CLA beyond food and pharmaceutical fields is also prospected.
