摘 要:以武夷山茶区的10份武夷名丛茶树资源为供试材料,在春、秋两季,分别取其新梢的一芽二叶,进行炒青固样,分析不同季节10份茶树资源的茶多酚、氨基酸、咖啡碱、黄酮类和水浸出物等生化成分的特征特性。结果表明,供试的10份茶树资源间各生化成分在春、秋两季均表现出显著的差异性,且变异幅度较大,具有丰富的生化成分多样性;按照适制性与酚氨比的关系,多数茶树资源适制乌龙茶,部分适制绿茶、红茶或红茶乌龙茶兼制;不同季节间,各生化成分总体上表现为春季除水浸出物和氨基酸质量分数低于秋季外,其他均高于秋季,呈现出一定的季节性;按照特异资源筛选的标准,初步判断JM065为高咖啡碱茶树资源。With 10 Wuyi Mingcong tea germplasm resources of Wuyi Mountain Tea Area as experimental materials,the "two leaves and a bug" of the new shoots was collected in spring and autumn separately,after green-making procedure,and to study the differences of tea polyphenols,amino acids,caffeine,flavonoids,and water extracts among ten tea resources in different seasons and different leave positions,which will provide some references for the development of Oolong tea in the Wuyi Tea Area and the selection of elite tea resources.The results showed that the biochemical ingredients of ten tea resources presented significant differences between harvesting stages of spring and autumn.In accordance with the relationship between adaptability and the phenol ammonia ratio,the majority of the tea resources was suitable for making Oolong tea,some of them were suitable for making green tea,some of them were suitable for making black tea or black tea Oolong tea both;the biochemical composition of the ten tea resources showed a seasonal changes.Generally,the tested biochemical compositions,except for the water extracts and amino acids,were more plentiful in spring than in autumn.JM065 was preliminary determined as a high caffeine tea resource according to the screening criteria of specific resources.
