浓香型大曲中细菌的分类统计分析

摘　　要：以"久香"牌包包曲为研究对象,通过菌落形态镜检和生理生化实验对纯种培养菌株进行初步分类,再用微生物自动鉴定仪对所得不同菌株进行分类鉴定,鉴定出了21株优势细菌菌株,对了解大曲菌系及酶系以及后续研究具有重要意义。JiuxiangTM Luzhou-flvour Daqu was used as research object. Pure-bred bacteria were preliminarily classified through microscopic colony morphology and physiological and biochemical experiments. Then different microbial strains were classified and identified through auto- matic identification apparatus. Finally, 21 dominant bacteria strains advantage were identified, which was of great significance in the under- standing of bacteria and enzyme of Luzhou-flavour Daqu and in subsequent research.
