摘 要:高粱红色素是从高粱壳中提取异黄酮半乳糖苷,是一种安全、无毒天然食用色素,具有很强抗氧化活性;高粱红色素主要成分为5,4'–二羟基异黄酮–7–O–半乳糖苷和5,4'–二羟基–6,8–二甲氧基异黄酮–7–O–半乳糖苷。目前,以低浓度乙醇为提取溶剂,提取高粱红色素方法主要有:碱溶酸沉法、微波辅助提取法、超声波辅助提取法等;高粱红色素可用于食品、药品、化妆品、染色剂等。该文参考近年最新研究成果,综述高粱红色素提取工艺、化学结构、理化性质和应用价值,对加强该色素深入研究和综合开发具有一定参考作用。Sorghum red pigment is isoflavones galactoside , a kind of natural pigment from the kaoliang shell and safety, not poisonous edible. Main components of red pigment were 5 ,#-two hydroxyl isoflavones -7-O-galactoside and 5,4'-two hydroxyl-6,8-two methoxy isoflavone -7-O-galactoside. A variety of methods were applied to extract the sorghum red pigment, such as alkali extraction and acid precipitation, microwave assisted extraction method and ultrasonic assisted extraction method, etc. Sorghum red pigment can be used to color for food, medicine, cosmetics, dyes and other industries.Based on the latest research results of home and abroad in recent years, the extraction process, the chemical constitution, the physic-chemical property , the biological active functions, and application of sorghum red pigment were summarized. This information may lead to a reference value in depth study, the comprehensive development and application of the sorghum red pigment.
