摘　　要：在浓香型白酒生产实践中,通过对优质窖泥与老化窖泥比较分析,老化窖泥的特征和危害以及窖泥老化的主要原因分析,提出了窖泥养护与复壮的程序和有效措施在实践中收到了显著的效果。Through the analysis of character, harm and cause of cellar mud aging, and comparison of good cellar mud with aged one in practice of Luzhou flavor liquor making, the program and effective measures of cellar mud maintenance and rejuvenation were proposed. The effects were obvious in practice.
