摘  要:大理石花纹是衡量肉品质的重要指标之一,是由肌肉组织中的肌内脂肪沉积形成。传统的肌内脂肪(或大理石花纹)测定方法是以感官评定和化学分析为主。近年来,各种无损检测技术因其快速、准确、无损、可实现在线检测等特点得到极大发展。综述了传统检测方法和无损检测技术在肌内脂肪(或大理石花纹)含量测定上的重要应用和研究进展,这些技术包括感官评定、化学分析、计算机视觉技术、近红外光谱技术、高光谱成像技术以及活体超声波检测等。同时指出各技术的优缺点和进一步发展方向,以期对相关研究人员的研究工作提供参考。Marbling is an important indicator to meat quality, and is formed by the intramuscular fat deposition in muscle tissue. Intramuscular fat (or marbling) is traditionally detected mainly by sensory evaluation and chemical analysis. In recent years, various non-destructive detection techniques have been greatly developed because of their rapid, accurate, non-destructive and online testing features. In this paper, the applications and progress of traditional and non-destructive detection techniques applied in determination of intramuscular fat (or marbling) were reviewed, including sensory evaluation, chemical analysis, computer vision technology, near-infrared spectroscopy, hyperspectral imaging technology as well as in vivo ultrasonic detection technology. The advantages and disadvantages of these technologies and the further direction of development were pointed out, in order to provide reference for the research work of the researchers.
