With hundreds of years' development and innovation, it has es- tablished as a complete system with unique artistry and has become one of the important schools of Chinese cuisine. Strict in the choice of materials and deliberate in processing, Huai' an cuisine tastes fresh and unique with its highlight for the original flavor of cooking materials. Its cultural connotation lies in its pursuit of har- mony in processing in and from place of growth, in matching different raw materials for the benefits of health and in combining different tasts into a mild one.
