摘　　要：目的:调查呼和浩特市市售畜肉中重金属含量水平,及时提出预警,保护人群的食品安全与健康。方法:采用国家标准规定的食品中重金属含量的测定方法,检测62份畜肉中重金属铅、镉、无机砷、汞的含量并对其进行了分析。结果:62份畜肉中,四项指标全部合格样品59份,合格率为95.2%。结论:根据重金属指标检测结果,认为呼和浩特市售畜肉存在重金属污染,特别是动物肾脏;同时在四种重金属污染中,镉污染最为严重,应引起相关部门重视。Objective：To investigate the heavy metal content in commercial meats in Hohhot city,and give timely warning to ensure the food safety and population health.Methods： In accordance with the national standard determination method for heavy metals in food,the levels of lead,cadmium,inorganic arsenic and mercury in 62 meat samples were analyzed.Results： In all samples,the total qualified rate was 95.2%.Conclusion： Heavy metals pollution was serious in meats in Hohhot,especially in animal kidney.Cadmium pollution ranked the top among the four heavy metals,which should be brought to the forefront by relative departments.
