摘  要:以玉米淀粉为原料,经过三偏磷酸钠交联及高温溶胀活化处理制备交联活性玉米,再采用酶水解法制备新型交联活性玉米多孔淀粉。通过粒径及BET分析,发现淀粉颗粒明显膨胀,比表面积增大。以吸水、吸油率的大小为指标衡量多孔淀粉的吸附性能,通过单因素及正交试验,考察了淀粉乳浓度、加酶量、酶解温度、酶解pH、酶解时间对吸附性能的影响,并对酶解工艺进行优化。结果表明,最佳的酶解工艺为淀粉乳浓度15%,加酶量2.0%,酶解温度45℃,酶解pH 4.4。此时所得交联活性多孔淀粉的吸水率为172.8%,吸油率为144.8%。Activited crosslinking porous corn starch was prepared through enzymatic hydrolysis by activited crosslinked corn starch, which was prepared through crosslinking and high temperature activating by corn starch. The starch particles were expanded and the specific surface area enzyme dosage, reaction temperature, reaction Ph and starch were investigated by single element experiments. Of starch became bigger. The effects of starch concentration, reaction time on the property of activited crosslinking porous Orthogonal experiments showed the best hydrolysis conditions were 15% starch concentration, 2.0% enzyme amount, reaction temperature 45 ℃, Ph 4.4, reaction time 12 h. Under these conditions, the water adsorption was 172.8%, the oil adsorption was 144.8%.
