摘  要:目的:介绍电子舌技术在各领域的应用及前景。方法:通过查阅国内外有关文献,归纳总结电子舌的原理、组成及特点,介绍电子舌技术在各领域已有的应用及发展前景。结果:电子舌具有响应时间短、检测速度快的特点,不仅避免了气相色谱、高效液相色谱等精密仪器复杂的样品前处理过程,而且还能避免人为测定时的个体差异,最终得到误差小、重复性好、灵敏度高的样品测定数据。同时,电子舌技术在对毒性、刺激性样品测定时,也显示了其独特的优势。电子舌技术在烟草行业、食品工业、环境监测、药学、医学诊断等多个领域中均有应用。结论:电子舌技术具有广阔的应用前景,体积小、价格低的便携式电子舌技术系统的研究开发受到重视。Objective: To introduce the application of taste sensing systems(Electronic Tongues Technology) in many areas.Methods: The principle,composition,and characteristics of electronic tongue were summarized by referring to domestic and foreign literatures and the application and prospect of electronic tongue were summed up which had been used in many areas.Results: Electronic tongue had the characteristics of short response time and fast inspection speed.Not only can it avoid the complex sample preparation process of gas chromatography,high performance liquid chromatography(HPLC) and other precision instrument,but also can avoid individual differences of artificial measurement.Finally,we got the sample measurement data with small error,good repeatability and high sensitivity.At the same time,the electronic tongue also showed its unique advantages in the determination of toxicity and irritating sample.The application of electronic tongue had been used in tobacco industry,food industry,environmental monitoring,pharmaceutical sciences and medicinal dignosing,and so on.Conclusions: Electronic tongue technique has very extensive application in the future and more attention should be paid to the research and development of the electronic tongue system characterized by small volume and low price.
