摘 要:研究了玉米浆干粉和复合氮源(NaN03和大豆蛋白胨)对Sphingomonans sp.ZW-3产威兰胶及其流变学性质的影响。结果表明:以玉米浆干粉为氮源时威兰胶产量达到17.6 g/L,威兰胶产品(0.5%溶液)表现出较强的液性行为和角频率依赖性,其平均分子量较低且分布宽。复合氮源有利于菌体生长,但威兰胶产量仅15.1 g/L,所得威兰胶产品(0.5%溶液)表现出较强的固性行为和角频率不依赖性,其平均分子量较高且分布窄。Effects of nitrogen Sphingomonas sp. ZW-3 was inv sources (dried corn syrup, NaNO3 and soybean peptone ) on welan production by estigated and the rheological properties of produced welan were evaluated. When dried corn syrup was used as nitrogen source, the welan yield reached 17.6 g/L, as compared to welan yield of 15.1 g/L with combined nitrogen (the mixture of NaNO3 and soybean peptone) as nitrogen source. Steady flow and dynamic viscoelastic measurements showed that the welan sample (0.5%, w/v) derived from combined nitrogen exhibited stronger solid-like behavior and independence of angular frequency.
