十堰市2000年-2010年食品中化学污染物的监测结果分析

摘　　要：目的:通过连续监测,掌握十堰市食品中化学污染物污染状况。方法:选择大型农贸市场、超市、集贸市场建立监测网点,随机采集常见24大类食品共计1852份,按照国家标准方法或《全国食品污染物检测手册》进行重金属、农药残留、添加剂测定。结果:重金属在食品中总超标率为4.08%,铝在食品中总超标率为26.1%;农药总超标率为6.02%;各类添加剂总超标率7.20%。结论:我市食品中铅、镉、砷、汞存在不同程度的污染,其中肉及动物内脏类和蛋及其制品(皮蛋)类是重金属污染的高危食品;蔬菜中农药残留状况不容乐观;食品中部分添加剂有不同程度的滥用。提示有关部门需加大对高危食品的检测和监管力度。Objective：Through continuous monitoring,to understand the pollution status of chemical contaminants in food in Shiyan.Methods： Mornitoring network points were set up in large farmers markets,supermarkets and bazaars in Shiyan city.A total of 1852 food samples were detected for the content of heavy metal,pesticide residues and food additive according to the national standard method or ＂Inspection manual of food contaminants＂.Results： The total exceeded rate of heavy metals,aluminium,pesticide,additives in food were 4.08%,26.1%,6.02%,7.20%.Conclusion： The contamination of lead,cadmium,arsenic and mercury in food is at different levels in the city,thereinto,the kinds of food,such as meat and animal innards and eggs and their products（preserved eggs） are the high risk food contaminated by heavy metal;the situation of pesticide residues in vegetable is not optimistic in the city;the additives in food are still abused to varying degrees,all these remind the relevant departments to intensify inspection and supervision on some high-risk food.
