摘 要:我国的食品安全问题突出,各种农药、抗生素、激素的运用,提高了食物产品的产量,满足了人口增长的需要,同时造成食物链中污染,引发了各种食品安全事件。食品安全检测技术的相对滞后,已无法满足检验的实际需求。分子印迹技术应用到食品安全检测,可以开发出灵敏、高效、准确的检测方法,解决食品污染物检测基体复杂、干扰多、前处理费时费力等难题。综述了分子印迹技术的机理以及在食品农药残留、兽药残留以及禁用药物等方面检测应用的研究进展,指出了当前分子印迹在食品安全检测应用中的难点与热点。Food safety is a big problem in China. The using of pesticides, antibiotics, and hormones improved the production of food to meet the needs of the population growth, but at the same time, it caused the pollution of the food chain and caused a variety of food safety incidents. However, food safety testing technology had lagged behind and unable to meet the actual needs of the inspection. The molecular imprinting technique reference to food safety testing could develop a sensitive, efficient and accurate detection method to solve the complex food contaminant testing matrix, interference, pre-treatment time consuming and laborious and other problems. It reviewed the development and mechanism of molecular imprinting technology, as well as practice in pesticide residues, veterinary drug residues, and prohibited drugs and other aspects of testing progress, points out the current deficiencies and hotspots of the molecular imprinting in food safety testing applications.
