摘 要:分析和评价山东即墨、辽宁庄河、江苏连云港3个不同地理群体魁蚶的营养成分。用常规方法检测魁蚶软体部的一般营养成分,用氨基酸分析仪检测氨基酸组成;用气相色谱法检测脂肪酸成分。结果表明:蛋白质含量和能值以江苏连云港群体最高;碳水化合物以辽宁庄河群体最高;氨基酸的组成非常全面,各地理群体魁蚶干物质中氨基酸总量由高到低的变化顺序为山东即墨(719.75mg/g)>江苏连云港(703.54mg/g)>辽宁庄河(685.16mg/g);EAA/TAA比率在34.72%~34.91%之间,必需氨基酸指数IEAA以山东即墨群体最高;呈味氨基酸的含量较高,变化范围为276.92~293.21mg/g;脂肪酸中ω3脂肪酸相对含量高;钙、铁、锌、硒等矿物元素和维生素含量丰富。不同地理群体的魁蚶营养成分虽存在一定差异,但与其他一些双壳贝类相比,魁蚶是营养价值较高的海洋食品。The aim of this study is to analyze and evaluate the nutrients of Anadara uropygimelana collected from Shandong, Liaoning and Jiangsu provinces. Nutrient components were analyzed by regular methods based on the standards of GB 5009--2010 and AOAC 996.06. Nutrition quality was evaluated on the basis of FAO/WHO's standards. The general nutrient compositions were determined by routine methods. Amino acid compositions were determined using amino acid analyzer. Fatty acid compositions were inspected using GC. The results showed that protein contents and energy value of Anadara uropygimelana from Jiangsu were higher than those from other areas. The maximal content of carbohydrate up to 31 mg/g in wet weight was determined in the sample from Liaoning. All kinds of amino acids were found in Anadara uropygimelana. The total levels of amino acids in Anadara uropygimelana from different areas were arranged in a descending order as following: Shandong (719.75 mg/g)〉Jiangsu (703.54 mg/g)〉Liaoning (685.16 mg/g). The ratio of EAA/TAA was in the range of 34.72%--34.91% and the essential amino acid index of Anadara uropygimelana from Shandong was 61.21. The content of delicious amino acids was abundant, which was in the range of 276.92--293.21 mg/g. The content of co3 PUFA in fatty acids was high and also the content of vitamin and Ca, Fe, Zn and Se were rich. Although the nutrition compositions were different in edible parts of Anadara uropygimelana from three provinces, Anadara uropygimelana is a kind of seafood with high nutritional value and is good for health when compared with other marine product.
