刃天青还原法快速检测鲜牛奶中总菌数的研究

摘　　要：鲜牛奶中细菌活动繁殖后的产物——还原酶可使刃天青等还原型染料褪色,试验结果表明:刃天青褪色时间(t)与牛奶中总菌数(N)存在一定的关系,通过生物学统计方法建立数学回归模型:N=A_1e^(kt)+y_0即N=5 969.906 94e^(-0.888 636t)+36.544 59.刃天青还原法检测牛奶总菌数方便快速,比传统的菌落计数法快40 h左右.In this paper, we determined the antioxidant activity, DHHP＂ scavenging rate, Vc content, the contem of total flavonoids and the content of total polyphenol of 20 kinds of vegetables in Luohe city, and also analyzed the correlation. The results showed that all of the detected vegetables had antioxidant activity, but had large difference in the antioxidant activity; lotus root had the highest antioxidant activity; and the total antioxidant activity had high correlation with the content of total polyphenol.
