贮藏时间及装具对小麦质量损失及品质的影响

摘  要:贮藏条件直接影响贮藏损失及粮食品质。为了确定农户贮藏小麦的较佳条件,保证贮藏过程中尽量减少储粮损失及保障其品质安全,对农户采用铁皮和塑胶两种不同材料装具贮藏小麦时品质(质量损失率、水分含量、脂肪酸值、蛋白质、过氧化氢酶活动度和虫害)的变化进行研究。结果表明:小麦在贮藏过程中,第1年的质量损失率大于第2年;水分呈下降趋势;脂肪酸值变化不大,整体上略有增加;蛋白质含量有所增加;过氧化氢酶活动度呈现上下波动趋势,最终和初始值相差不多;遭受虫害侵害的状况受季节温度影响。综合考虑贮藏的质量损失和小麦的品质指标,塑胶装具贮藏优于铁皮装具。Wheat quality and losses in storage can be affected by storage conditions directly. To establish the better storage conditions for wheat and reduce losses in storage, the changes of wheat quality (weight loss, moisture, fatty acid, protein, catalase activity and pest insects) stoning at sheet metal and plastic grain storage containers were studied. The results showed that the weight loss in the first year was greater than that in the second year. The grain moisture de- creased, fatty acid increased slightly, and protein increased during the 24 months of storage. The catalase activity re- mained similar during storage. The insect counts were affected by the season. In overall, the plastic grain storage con- tainer seemed to perform better than the sheet metal container.
