摘　　要：γ–癸内酯是重要香精香料,该文概述利用耶氏解脂假丝酵母(Yarrowia lipolytica)发酵生产γ–癸内酯代谢过程和相关基因POX1–POX6在β–氧化中不同功能,总结在发酵过程中影响GDL产量因素和解决方案。γ-Decalactone （ GDL ） is an important flavour compound. This review was dealt with the metabolic pathway of fermentation using Yarrrowia lipolytica to produce GDL and the function of the genes POX1-POX6 in β-oxidation, and the factors for the vield of GDL in the process.
