摘 要:与世界发达国家相比,我国食品冷藏链起步较晚,在技术、设备、行业标准和系统管理水平等方面均有一定的差距。如何确保低温冷冻、冷藏食品的品质,提升冷藏链的管理和发展水平,已成为当前我国冷藏链行业建设亟待解决的首要问题。本文分析我国食品冷藏链各主要环节的发展现状:2011年全国冷库总容积7111万m^3,以全国13.7亿人均冷库占有量计算,约为美国2008年人均数的22%;我国冷藏汽车约有4.5万辆,占货运汽车的比例仅为0.35%。同时指出我国食品冷藏链在发展过程中存在的一些问题,如冷藏链设施和装备落后,相关法规和标准不健全等。结合实际提出大力发展食品冷藏链的基础建设;建立健全行业标准,完善行业管理法律法规;加强信息化建设及发展第3方低温物流业务等适合我国食品冷藏链发展对策。Because of the late start of cold chain in China, compared with the developed countries, China's food cold chain technology, equipment and facilities, industry standards and systems management level, etc. all have certain gap. How to guarantee the quality of cooling and frozen food, promote the management and development of cold-chain, has become a primary problem of cold-chain construction. The current situation of the food cold chain was proposed. The total volume of cold store in China in 2011 was 71 110000 m3, the per capita volume of cold store in China based on 1 370 million was 22 percent of that of U.S.A. The number of refrigerated truck in China was about 45 000, which was only 0.35 percent of that of goods vehicles. The problems in the development of cold chain in our country were also analysed, such as the backward in technique of equipment and facilities, inadequate industry regulations and standards, etc. Combined with the actual situation, several pertinence strategies were recommended including developing cold chain infrastructure, establishing criterion and regulations, strengthening information construction and developing the third party logistics business.
