摘 要:利用傅里叶变换衰减全反射红外光谱法(FTIR/ATR)简单快速地测定大豆油的过氧化值。采用偏最小二乘法(PLS)建立光谱数据与化学测定值之间的校准模型。油样根据过氧化物值分为高过氧化值(10~90 mmol/kg)和低过氧化值(0~10 mmol/kg),然后根据分组波谱及全部波谱分别建模。选择合适的波长范围以及预处理方法,用验证样品集对定标方程进行验证,获得验证相关系数分别为0.999 9、0.996 0,定标集预测标准差(SEC)分别为0.27、0.21,验证集预测标准偏差(SEP)分别为0.58、0.25。FTIR/ATR法的变异系数和相对偏差均优于化学法。因此模型具有较高的精密度和良好的稳定性,研究开发的FTIR/ATR法分析油脂过氧化物值具有快速、准确环境友好等优点。a simple and rapid quantitative method to determine peroxide value of soybean oil had been developed using Fourier transform infrared spectrometry and attenuated total reflection techniques (FTIR/ATR). Calibration model based on partial least -squares (PLS) analysis was constructed using the spectral and chemical determination data of the calibration set. Oil samples were split into high peroxide value group (10 -90 mmoL/kg) and lowperoxide value group (0 -10 mmol/kg) based on the peroxide value. The analytical models were built based on grouping spectra as well as the full spectra. The right wavelength ranges and pretreatment methods were screened. Evaluation of the calibration model was certified by using validation sample set. And the validation for the correlation coefficient was respectively 0. 999 9, and 0. 996 0, and the standard error of calibration (SEC) was respectively 0.27 and 0.21 ,as well as the standard error of validation (SEP) was respectively 0.58 and 0.25. The coefficient of variation and relative deviation of FTIR/ATR method were found to be lower than those of the chemical method. So the models showed the high precision and good stability. FTIR/ATR methods developed for peroxide value analysis in edible oil were fast, highly accurate and environmental friendly.
