益生菌和中草药添加剂对北京油鸡屠体性状和肉品质的影响

摘　　要：试验检测分析了林下放养条件下在饲料中添加益生菌和中草药对北京油鸡屠体性状和肌肉品质影响。结果显示,益生菌组、中草药组与对照组相比,胸肌重和胸角极显著增加(P<0.01),龙骨长、半净膛重和全净膛重显著增加(P<0.05);整体上其他屠体性状表现中草药组和益生菌组结果均优于对照组,有提高趋势;肉色、剪切力、失水率无显著差异,皮肤色差异显著(P<0.05)。试验结果表明,饲料中添加中草药制剂和益生菌对提高北京油鸡生长发育、改善肌肉品质有一定促进作用,值得进一步研究和推广。The effects of probiotics and Chinese herbal on carcass traits and meat quality in Beijing fatty Chicken bred in forest freely were investigate＆ The results showed that, compared with control, both Chinese herbal and probiotics extremely significantly increased pectoral muscle weight and chest angle （P〈0. 01） and significantly increased keel bone length, semi eviscerated and eviscerated weight （P〈0. 05）; And other slaughter traits showed some improving changes in the two treated groups, but not significant. There was no significant difference in incarnadine, shear force and dehydration rate except the skin color （P〈0. 05）. It can be concluded that Chinese herbal feed additives and probiotics have an accelerating effect on .the growth and development, improve carcass traits and meat quality in Beijing fatty chicken.
