摘　　要：肠膜明串珠菌利用蔗汁中的蔗糖发酵产生的α-葡聚糖会造成糖分损失并使制糖过程处理困难。为了解α-葡聚糖对国内糖厂生产过程影响程度,摸索解决该问题的合理方法,对国内部分糖厂蔗汁中α-葡聚糖的含量作了调查,分析了国内外糖厂α-葡聚糖问题差异的原因,提出了糖厂控制α-葡聚糖问题的措施。Dextran formed by Leuconostoc mesenteroides with sugar in sugarcane jutce leaaed to lOSS of recoverable sucrose and caused processing difficulties. To understand the influence of dextran on the domestic sugar production and find a reasoned approach to the problem, this paper investigated the dextran content of sugarcane juice in partial Chinese sugar-refineries, analyzed the main causes leading to the differences of the problem in China and abroad, suggested measures to overcome the dextran problem in the sugar-refinery.
