摘 要:分别从A、B、C、D 4条小麦制粉生产线中采集不同工序的吸风粉及加工的小麦,研究不同工序吸风粉及小麦粉的基础特性。结果表明:气力输送风网的吸风粉粒度相对较小,小颗粒淀粉所占比重较高,粗淀粉含量较低,灰分与蛋白质含量较高。吸风粉蛋白质含量与加工小麦的蛋白质呈正相关。小麦粉后处理风网吸风粉与气力输送风网吸风粉相比,其粒度与粗淀粉含量明显较高,蛋白质含量则相对较低,仅稍高于小麦粉的蛋白质含量。The basic characteristics of filter flour and processed wheat were investigated, during different processes from A, B, C and D four milling production line, respectively. The results showed that the filter flour obtained from air conveyor system had relatively small particle size and the proportion of small starch granules was higher. The crude starch content was lower while the ash and protein content were higher. The protein content of filter flour was positively correlated with the protein content of the wheat flour. Compared to filter flour came from air conveyor system, filter flour collected from flour post process- ing ventilation had much higher particle size and crude starch content but lower protein content, which was slightly higher than the protein content in the wheat flour.
