摘　　要：在描述苜蓿营养价值的基础上 ,概述了苜蓿草粉在畜禽养殖中的应用和苜蓿叶蛋白在饲料和食品工业中的应用 ,以及苜蓿膳食纤维的制备与应用。最后指出了当前存在的问题 。On the basis of describing the value of alfalfa nutrition, the application of alfalfa meal in animal feeding, alfalfa leaves protein(ALP) in feed and food industry and the preparation and application of alfalfa dietary fibre additive(ADFD) were reviewed. Finally the current situation and analysis of the prospect were expounded.
