摘　　要：目的了解山东省农村食品中主要污染物及有害因素污染水平,掌握山东省农村市场食品安全状况。方法对2011年山东省农村地区生产销售的11类1 820件食品,根据国家卫生标准进行检测和分析。结果 1 820份食品样品中有1 673份符合国家标准,合格率为91.92%。不同类别食品合格率间差异有统计学意义(χ2=2.420,P<0.05),乳粉和方便面酱料的合格率最高,为100.00%,熟肉制品合格率最低,仅为64.71%;不合格样品中以超范围使用或过量添加食品添加剂所占比例(51.02%)最大;不同检测项目合格率经χ2检验,差异有统计学意义(χ2=6.331,P<0.05)。结论山东省农村食品安全状况总体较好,但也存在微生物指标过高等问题。Objective To investigate the main pollutants and the pollution levels of harmful factors in rural areas of Shandong Province,and to grasp the situation of food safety of rural markets in Shandong Province.Methods A total of 1,820 food samples were randomly selected from 11 categories of food in rural areas of Shandong Province.The specimens were tested with national standard procedures.Results Among 1,820 samples tested,1,673 accorded with the national standard,with the qualified rate of 91.92%.There were statistically significant differences in the qualified rates among different categories of food（χ2=2.420,P〈0.05）.The passing rates of milk powder and instant noodle sauce were both the highest（100.00%）.The qualified rate of cooked meat was only 64.71%.Among the unqualified food samples,abusing and excessive using food additives accounted for the largest proportion（51.02%）.The results of χ^2 test showed that there were statistically significant differences in the qualified rates among different detection indicators（χ^2=6.331,P〈0.05）.Conclusions The overall condition of rural food safety in Shandong Province is good,but some problems still exist,such as excessive microbial indicators.
