摘 要:利用pNP法测定了夏茶叶内的β 葡萄糖苷酶活性 ,同时通过GC分析法测定了夏茶叶内 17种醇系香气的游离量和结合态香气量。夏茶中结合态香气总量远远高于游离香气量。遮荫及有机肥为基肥的处理均能大幅度提高夏茶叶片中 β 葡萄糖苷酶的活性 ,其中遮荫处理的效果明显优于有机肥处理 ,且二者的效果存在着明显的叠加作用。β 葡萄糖苷酶活性高的处理游离香气量相应较高 ,而结合态香气量相应较少。遮荫及有机肥处理后 ,夏茶中芳樟醇、香叶醇等游离香气量的增加较为明显 。glucosidase and 17 free or binding alcoholic aroma compounds in summer tea leaves were determined with pNP and GC methods respectively The amount of binding aroma was remarkable higher than free aroma in summer tea Shading and using organic fertilizer as base fertilizer could increase β glucosidase activity in summer tea leaves greatly, and shading was even better than organic fertilizer on improving β glucosidase activity Both treatments showed the adding effect The higher the β glucosidase activity was, the higher the amount of free alcoholic aroma was The amount of the binding alcoholic aroma, however, got to lower Under the shading and organic fertilizer conditions the amount of free alcoholic aroma such as linalool and geraniol was increased distinctly which are good for tea aroma quality
