摘　　要：扇贝是我国海水养殖的重要品种之一,具有很高的营养和食用价值。本文概述了扇贝加工产品的研究现状,总结了干贝、即食扇贝、扇贝裙边的综合利用等方面的研究进展,展望了扇贝相关产品的发展方向。Scallop aquaculture is one of the important species in China with high nutritional and food value.This paper summarizes the status of scallop processing product research,summed up the research progress of the processing of dried scallops,instant scallop and the comprehensive utilization of scallop mantle,and look forward to the developing prospect of scallop processing.
