摘 要:探讨纤维素酶辅助提取枣核中总黄酮的最佳工艺条件,为红枣加工副产物的进一步开发利用提供理论基础。以红枣核为原料,研究纤维素酶用量、酶解温度、酶解时间、酶解pH等因素对红枣核中总黄酮提取的影响。枣核中总黄酮提取的最佳工艺条件为:采用60%乙醇溶液做为提取液,纤维素酶用量1.5%,酶解温度为55℃,酶解时间为90 min,酶解pH为5.0,总黄酮提取量为487.8 mg/100 g。纤维素酶在枣核总黄酮提取过程中发挥了重要作用,与未添加酶相比,枣核中总黄酮提取量增加了24.3%。The optimal conditions for cellulase assisted extraction of total flavonoids from jujube pit were studied. With jujube pit as raw material, the effects of cellulose enzyme dosage, enzymolysis temperature, enzymolysis time, enzymolysis pH value and other factors on the extraction of total flavonoids from jujube pit were studied. The optimal extraction conditions of flavonoids from jujube pit were: using 60% ethanol solution as extract, cellulose enzyme dosage of 1.5%, enzyme temperature 55 ~C, hydrolysis time 90 min, enzymolysis pH 5.0, the yield of flavonoids extraction was 487.8 mg/100 g. Cellulase played an important role in the extraction of total flavone in jujube pit. And the extraction rate of total flavonoids was increased by 24.3% compared with the control.
