高职旅游酒店类课程教学改革探析——以《餐饮服务与管理》课程为例

摘　　要：课程建设是高等学校教学质量与教学改革工程的重要组成部分。受行业性质决定,旅游酒店专业属于应用型、操作型、技能型专业,是为社会培养餐饮、旅游等服务型人才的专业。以旅游与酒店管理专业的主干核心课程——《餐饮服务与管理》课程为例,从教学、实践、考核三方面提出课程建设的改革思路,以实现专业建设与社会需要的对接。Course construction is an important part of college teaching quality and teaching reform project. Tourism and Hotel Management belongs to professional majors which trains hotel service, tourism service and other service skills. In order to make the professional construction to meet the needs of the community, the author take ＇ Food and beverage service and management＇ course for example and make construction reform recommendations from three areas of teach-ing, practice and assessment.
