摘 要:硝基呋喃是一种人工合成的抗菌药物,曾一度用于治疗畜禽和水产养殖动物疾病,由于高残留和对部分试验动物的"三致"作用,被许多国家列为畜禽和水产养殖禁用药物。本文以FAO/WHO食品添加剂联合专家委员会(JEC-FA)第40次会议及欧盟食品安全局(ESFA)的风险评估报告为主要依据,并结合相关的毒理学和膳食暴露数据,探讨了其在我国膳食中的暴露情况及对我国人体健康的风险,以期为我国食品中硝基呋喃的监管工作提供参考。Nitrofurans is a kind of synthetic antibacterial drug that was used routinely in some countries to treat animal diseases in livestock, poultry and aquaculture. It is not permitted in livestock, poultry or aquaculture because of the long half- life and the teratogenic, carcinogenic and mutagenic adverse effects to human. This article describes the risk assessment of nitrofurans in food based on the reports of JECFA 40th meeting and the reports from ESFA. Based on the toxicology and dietary exposure data, the nitrofurans exposure in our diet and its risk to human health were de- scribed, which could provide a reference for the supervision of nitrofurans in food.
