弱离子交换分离葡萄皮色素物质及其光吸收特性

摘　　要：通过Cellulose DE-25弱离子交换色谱对葡萄皮水溶性和脂溶性色素进行分离并对各色素物质进行光吸收扫描分析。结果表明,从葡萄皮中分离得到不同的8种色素物质。光吸收特性分析初步判断8种色素中有2种属于花色素类,2种属于儿茶素类;另4种色素分别为反式白藜芦醇苷、醌类、非酚类物质的色素和一种由多种物质聚合而成的深褐色素。研究为了解葡萄皮颜色构成物的种类、性质以及利用葡萄皮渣等提供了实验数据。The water-soluble and lipid-soluble pigments from grape skin were separated using Cellulose DE-25 weak ion-exchange chromatography and their absorption spectra were measured.Based on absorption spectral characteristics,eight different pigments was obtained,of which two belonged to anthocyan and two were catechins,the other four pigments were trans-piceid,quinones,non-phenolic pigment and puce pigment composing of different kinds of substance,respectively.This study offers the experimental date for realizing the varieties and characters of substance which form the colour of grape as well as utilizing grape skin.
