摘 要:为探索不同浓度壳聚糖对绿化9号桃的保鲜效果,以晚熟品种绿化9号桃为试材,采用不同浓度壳聚糖(1g/100mL,2g/100mL)涂膜处理后,于低温(0±1)℃,相对湿度80%~95%下贮藏,并比较各处理间理化指标的变化。结果表明:与CK组相比,壳聚糖涂膜处理能明显减少褐变指数的下降,抑制果实失重率和呼吸速率的变化,延缓果实硬度和VC含量的下降(P<0.05),但对可溶性固形物含量的影响不显著(P>0.05)。其中,浓度为2g/100mL壳聚糖处理的保鲜效果最优,贮藏30d的褐变指数为24.77%、失重率和呼吸速率分别为4.17%和7.43mg CO2/(g.h),可溶性固形物含量和VC含量分别为11.67%和2.34mg/g。Lvhua 9 peaches were used to explore the effects of 1% chitosan and 2 % chitosan treatments on the quality of peaches stored at (0±l)℃ and relative humidity 80%~95%. Physicochemical indexes of various treatments were compared. The results showed that compared with CK, chitosan coating treatment could significantly reduce the decline of browning index, inhibit the respiration rate and weight loss rate, delay the decrease of fruit firmness and Vc content (P%0.05), but the effect on the soluble solids content was not significant (P 〈 0. 05). Among them, treatment of 2% chitosan showed significantly higher inhibitory effect than the former, 30 d of storage, the browning index was 24.77%, weightlessness rate and respiratory rate were 4.17% and 7.43 mg (CO2)/(g · h), soluble solids content and Vc content were 11. 67% and 2.34 mg/g respectively.
