摘　　要：以火葱头为原料加工出来的调味料具有良好的口感,尤其是消费者的认可率极高。火葱原料储存比较困难,若没有深加工技术支持,这样的原料运用很难适应消费者稳定持久的需要。该文就火葱提取物的研究和商业应用技术两方面进行探讨,以便更好地为消费者服务。There are good taste seasoning using shallot as meterial, and its consumer recognition rate is high. But there are problems in Shallot storage. If there is no deep processing technology supported, it is difficult to meet the needs of the consumer durable. This paper discussed two aspects of shal- lot extract research and commercial application of technology to provide references to consumers.
