不同温度和保鲜剂对高溶氧水袋马粪海胆保藏的影响

摘  要:以马粪海胆为原料,对不同温度(0、4℃、常温)和保鲜剂(EDTA、山梨酸钾、乳酸链球菌素(Nisin))下高溶氧水袋海胆腺苷三磷酸(Adenosine Triphosphate,ATP)、细菌总数(TVC)、pH指标的变化进行测定。结果表明:ATP降解速度:常温>4℃>0℃,0℃条件下细菌总数明显低于4℃,pH明显高于4℃。经三种保鲜剂处理后,海胆贮藏过程中的品质都得到了不同程度的改善,EDTA和Nisin的抑菌效果主要表现在贮藏前期,山梨酸钾组的抑菌效果则在贮藏末期较为明显;三种保鲜剂都使pH不同程度下降,山梨酸钾下降最为明显,最低达到5.56±0.12;添加山梨酸钾组的ATP百分含量在贮藏初期下降迅速,最低达到14.27%±4.21%,添加Nisin和EDTA组的海胆ATP百分含量在贮藏初期维持在较稳定的高水平状态,贮藏2d后分别保持在30.71%±1.10%、32.85%±2.45%的水平。The content of ATP,TVC and pH of Hemicentrotus pulcherrimus stored at 0℃,4℃and room temperature were investigated.And the Hemicentrotus pulcherrimus processed with EDTA, potassium sorbate and Nisin were evaluated through the content of ATP, TVC and pH.Results indicated that the degradation velocity of ATP. room temperature 〉4℃〉0℃,the content of TVC which stored at 0℃were significantly lower than stored at 4℃,while pH significantly higher than 4℃ The storage quality of Hemicentrotus pulcherrimus processed with all the three antistaling agents were improved in varying degree,the antibacterial effect of EDTA and Nisin were mainly display in the earlier storage,while potassium sorbate in the end storage.The pH of Hemicentrotus pulcherrimus processed with all the three antistaling agents were decreased in varying degree,while potassium sorbate dropped to 5.56 ± 0.12.The ATP processed with potassium sorbate was dropped to 14.27%±4.21% in the earlier storage,while the ATP processed with Nisin and EDTA maintained a high level,the content of ATP were 30.71% ± 1.10% ,32.85% ±2.45% after 2d.
