摘  要:以宁夏枸杞为原料,通过Box-Behnken试验设计研究提取时间、料液比及浸提温度对枸杞素浸提效果的影响,建立各影响因素的回归方程,并通过响应面分析法优化,得到了枸杞色素的最佳浸提条件:料液比为1∶9、温度为38℃、时间为2.5h.进一步研究光照、温度、酸、碱、金属离子对枸杞色素稳定性的影响.结果表明:对日光不稳定,避光保存较稳定;在高温下不稳定;在碱性环境中较稳定;对金属离子如Fe3+,Fe2+,Cu2+等不稳定,而K+,Na+对其影响较小.The conditions extraction time,ratios of liquid to solid and temperature have been investigated to understand their effects on the pigment extraction in wolfberry fruit from Ningxia.Box-Behnken matrix design has been used to establish a quadratic regression model,and response surface analysis carried out for optimization purpose.The optimum extraction conditions have been determined as follows: ratios of liquid to solid is 1∶9;temperature,38 ℃;and extraction time,2.5 h.The stability of pigment from wolfberry fruits has been studied in this research.The results show that high temperature affects the stability of pigment.In addition,they are sensitive to sunlight.However,it is not so sensitive to darkness.Pigment are more stable in alkaline condition compared to acid condition;The stability of pigment is reduced when Fe3+,Fe2+,Cu2+,is respectively added to its medium whereas other metal ions K+,Na+ have no such effect on their stability.
