摘 要:真菌毒素的控制与管理涉及粮食的食用安全问题。根据粮食生产气候条件、粮食流通管理模式以及粮食加工利用的特点,不同的国家和地区形成了符合当地具体情况的真菌毒素控制和管理模式。比较研究了中国和欧盟粮食中的真菌毒素最高限量规定,粮食经营者的责任,真菌毒素监控过程中扦样、检测以及超标粮食的定向处理等有关规定。The key issue of the mycotoxin management in grain is safety for both human and animals. Due to the differences of weather conditions, the model of grain chain and grain processing technology, the national and regional regulations as well as standards on the mycotoxin management were issued in order to meet various of the requirements. In this study,the European regulations in comparison with Chinese regulations were introduced in terms of maximum limits (ML) for both human consumption and animal feed, responsibilities of grain operators, sampling, test and analysis methods, and the destination of infected grain.
