摘  要:采用超声辅助2种反胶束体系萃取大豆油脂,分析超声波技术影响反胶束萃取大豆油脂的主要因素,并分析所得油脂的品质与之浸出法进行了对比。经试验研究得到,最佳的工艺条件为超声时间1 h、超声温度60℃、超声功率300 W、全脂豆粉加入量为0.04 g/mL;2种不同反胶束体系萃取大豆油脂的萃取率差别不大,AOT反胶束法的前萃率为81.39%,AOT-Tween85反胶束法的前萃率为84.17%。反胶束萃取得到的油脂,酸价及过氧化值比浸出法要低;浸出法、AOT反胶束法、AOT-Tween85反胶束法3种方法提取的大豆油脂脂肪酸组成和含量基本相同,色泽、皂化值也基本相同,碘值稍有差异。This paper studied that ultrasonic auxiliary two reverse micelle system extracted soy oil, and analyzed that main influence factors of reverse micelle ultrasonic extracting soy oil, then analyzed the quality of the oil and compared with soy oil of leaching method. After the single factor test and research, the optimum technological conditions were ultrasonic time 1 h, ultrasonic temperature 60 C and ultrasonic power 270 W, soy flour concentration 0.04 g/mL. Through the verification test after the single factor test, soy oil forward extraction rate of succinic acid two isooctyl ester sulfonate (AOT) reverse miceUe method was 81.39% and AOT - Tween 85 method was 84.17% on this condition. Soy oil extraction rate of two different reverse micelle systems were different, and AOT - Tween 85 reverse micelle systems were higher than AOT reverse micelle systems. Acid value and peroxide value of reverse mi- celle extracting oil were lower than leaching method, so it can be seen that oil quality of reverse micelle extraction is better. Oil color and luster and saponification value were same nearly. But the crude oil of AOT - Tween 85 reverse micelle method was a little lower than the other two methods, so the iodine value was different slightly. In order to study the fatty acid composition, methyl ester the oil to reduce the boiling point and improve its stability in the first, and then made gas chromatography. Fatty acid composition could get from the gas chromatogram. It can be seen that soy oil content and the fatty acid composition of leaching method, AOT reverse mieelle method, and AOT - Tween 85 reverse micelle method were same nearly, eolor, saponification values are the same, and slightly different of iodine.
