摘  要:通过比较驴乳与牛乳脂肪酸结构特点,对驴乳脂肪酸特性进行分析评价。以驴乳和牛乳为研究对象,采用气质联用的方法进行脂肪酸的分离和测定。结果表明:驴乳中的脂肪酸以不饱和脂肪酸为主,在饱和脂肪酸和单不饱和脂肪酸方面与牛乳差异很大,多不饱和脂肪酸尤其是亚油酸含量很高。驴乳相对于牛乳具有更高的营养价值,在开发高营养系列产品时更具市场潜力。Generalize the speciality of fatty acids of donkey milk by comparing of fatty acids of bovine milk. Separated and determinated the fatty acids by gas chromatography-mass spectrometry (GC- MS) in donkey milk and bovine milk, which are the objects of this study. The unsaturated fatty acids are the main components in fatty acids of donkey milk. There is obvious difference in saturated fatty acids and unsaturated fatty acids of the two kinds of milk, but the content of the polyunsaturated fatty acids, especially the 9,12-octadecadienoic acid of donkey milk are higher than the ones of bovine milk. Donkey milk has the higher nutrition than bovine milk, and has bigger market potential when is empoldered into some products with high nutritional value.
