摘  要:为了增强竹笋膳食纤维的功能特性,在初级粉碎的基础上,采用超微粉碎的方法,进一步对膳食纤维进行细化,考察了超微粉碎对竹笋膳食纤维粒径的分布和化学组分的影响情况,以及不同粒径膳食纤维对NO^2-和胆酸钠吸附量的影响情况。结果表明:超微粉碎时间增加,粒径减小,则比表面积增大;当超微粉碎时间达到40min时,粒度小于150gm的粉末颗粒可达到81.16%;无论何种粒径的膳食纤维,其主要成分均是IDF(85%以上);膳食纤维粉末粒径越小,其SDF含量越高,而其IDF含量越低;超微粉碎获得的各种粒径竹笋膳食纤维的SDF/IDF比值在0.0048~0.0158之间变化,且随着膳食纤维粒径的减小,其对NO^-和胆酸钠的吸附量却逐渐增大。In order to enhance the functional properties of dietary fiber in bamboo shoots, after primary crushing, dietary fiber was refined, effects of ultrafine comminution on particle size distribution and chemical composition of dietary fiber in bamboo shoots were researched, and effects of different particle sizes of dietary fiber on NO2- and sodium cholate adsorption were analyzed. The results show that with ultrafine comminution time increasing, particle size is decreased and specific surface area is increased. When ultrafine comminution time reaches 40 min, powder quantity that particle size is less than 150 Ixm can reach 81.16%. The main ingredient in dietary fiber with various sizes is IDF (more than 85%). The smaller particle size of dietary fiber powder, the higher SDF content, and the lower IDF content is. The SDF/IDF ratio of dietary fiber in bamboo shoots is from 0.0048 to 0.0158. With dietary fiber particle size is decreased, the capacity of adsorbing NO2 and sodium cholate is gradually increased.
