摘 要:目的探索以有色米加工副产物液态发酵食药用真菌松茸的技术,研究响应面法优化培养对松茸的食药用活性成分的影响。方法以食药用真菌松茸为研究对象,以响应面分析法优化培养温度、摇床转速和培养基初始pH值等发酵条件,并进行其活性成分分析。结果响应面优化回归方程为Y=192.6267-2.1638X1+5.6100X2-1.2963X3-25.2171X12-5.0896X22-7.2141X32-1.0250X1X2+1.5275X1X3+1.6750X2X3。食药用真菌松茸胞内活性多糖、可溶性蛋白、氨基酸含量分别为196.20 mg/g、12.93 mg/g、13.20%,较PDA培养基分别提高25.70%,48.62%,33.33%,必需氨基酸含量也升高了35.40%。结论有色米加工副产物能促进食药用真菌松茸菌丝体的生长,并且促进胞内多糖、蛋白质和氨基酸等活性物质的生成。Objective The colored rice bran fermentation waste was used to develop a technology of producing Tricholoma mat- sutake by myeelium in liquid - fermentation state. The method of increasing active substances of Tricholoma matsutake after fer- mentation had been studied. Methods Response surface methodology was used to optimize three culturing conditions : culture tem- perature, shaker speed and pH. The bioactive compositions of Tricholoma matsutake which were cultured in the most optimized con- ditions were analyzed. Results Response surface analysis was applied to determine the effect of central composite experiment de- sign and the effect of prime factors on the yield of polysaceharides from Tricholoma matsutake . The equation is Y = 192. 6267 - 2. 1638X1 +5. 6100X2 - 1. 2963X3 -25. 2171X12 -5. 0896X22 -7. 2141X32 - 1. 0250X1X2 + 1. 5275X1X3 + 1. 6750X2X3. The re- suits showed that the contents of polysaccharide ,protein and amino acids in Tricholoma matsutake cultured with colored rice bran fermentation waste culture medium were higher than PDA medium in optimized condition. Conclusion The data showed that bioac- rive compositions in colored rice bran fermentation waste were more superior to the PDA medium for producing Tricholoma mat- sutake and accumulating bioaetive compositions.
