摘 要:采用超声波辅助提取法从蓝莓籽中提取蓝莓籽油,测定了蓝莓籽油的理化指标,并用GCMS对蓝莓籽油的脂肪酸组成进行了分析。结果表明:蓝莓籽出油率为18.42%;蓝莓籽油的相对密度为0.946 6、折光指数为1.464 9、酸值(KOH)为3.743 mg/g、皂化值(KOH)为182.3 mg/g、过氧化值为2.137 mmol/kg、碘值(I)为128.7 g/100 g;蓝莓籽油中共有13种脂肪酸,主要为油酸、亚油酸、亚麻酸等,不饱和脂肪酸占87.12%,饱和脂肪酸占11.75%,有较高的营养价值,值得开发利用。The oil was extracted from blueberry seed by ultrasonic - assisted extraction. The physicochem- ical indexes of blueberry seed oil were determined and its fatty acid composition was analyzed by GC - MS. The results showed that the yield of blueberry seed oil was 18.42%, and the physicochemical inde- xes of blueberry seed oil were as follows : relative density 0. 946 6, refractive index 1. 464 9, acid value 3. 743 mgKOH/g, saponification value 182.3 mgKOH/g, peroxide value 2. 137 mmol/kg, iodine value 128.7 gI/100 g. Thirteen fatty acids of blueberry seed oil were identified, and the main fatty acids were oleic acid, linoleic acid and linolenic acid. The contents of unsaturated fatty acids and saturated fatty acids were 87.12% and 11.75% ,respectively. Blueberry seed oil had high nutritional value, and it was worth developing.
