摘  要:用 Ca Cl2 溶液对采后金针菇子实体进行真空浸渗处理 .结果表明 :0 .0 0 5、0 .0 1、0 .0 3、0 .0 6、0 .0 9mol· L-1的 Ca Cl2 处理能明显抑制金针菇采后呼吸和 C2 H4 释放 ,显著减少金针菇采后可溶性固形物、蛋白质、还原糖、淀粉、有机酸、维生素 C、粗纤维等含量的损耗 ,显著抑制金针菇采后细胞膜透性的增加 ,提高采后贮存品质 ,其中尤以 0 .0 1、0 .0 3、0 .0 6 mol· L-1Ca Cl2 处理效果最好 ;0 .12、0 .15mol· L-1Ca Cl2 处理对金针菇采后生理生化变化的影响与对照差异不显著 ;0 .0 0 5mol· L-1的 Ca抑制剂Flammulina velutipes sporocarps were vacuum infiltrated with calcium chloride solutions in order to determine the influence of calcium treatments at different concentrations on the postharvest physiological and biochemical changes. CaCl 2 treatment at reasonable concentrations of 0.005, 0.01, 0.03, 0.06 and 0.09 mol·L -1 could remarkably inhibit postharvest respiratory and ethylene production, decrease losses in soluble solid, protein, soluble reducing sugar, starch, soluble organic acid, vitamin C and fibre contents, restrain the increase of cell membrane permeability as well as enhance the storage quality, especially, the effects of 0.01, 0.03, 0.06 mol·L -1 CaCl 2 were the highest. Postharvest physiological and biochemical changes in F.velutipes treated with calcium chioride were not evidently inhibited at the high concentrations of 0.12 and 0.15 mol·L -1 , and were stimulated at the concentration of 0.005 mol·L -1 EGTA.
