新疆酸马奶中产γ-氨基丁酸乳酸菌的筛选与鉴定

摘　　要：γ-氨基丁酸是哺乳动物体内的一种抑制性神经递质,具有重要的生理功能。从新疆酸马奶中分离出8株乳酸菌,经纸层析和改良纸层析实验,获得4株产γ-氨基丁酸的乳酸菌,其中S5菌株产量最高,达1.6 g/L。通过生理生化实验和16SrDNA序列比对,鉴定其为戊糖乳杆菌。γ-Aminobutyric acid （GABA） is one of the major inhibitory neurotransmitter in mammals and has many physiological functions. In the experiment, 8 strains of lactic acid bacteria were screened from koumiss in Xinjiang Province. Four strains with high yield of GABA were obtained using paper chromatography and improved paper chromatography. Among them, the strain S5 which yield 1.6 g/L GABA had the highest content. And it was identified as Lactobacillus pentosus by physiological and biochemical tests and 16SrDNA sequence aligmnent.
