摘　　要：从微生物脂肪酶催化酸解、酯交换、水解、醇解和酯化等方面综述了国内外猪油脂生物转化制备结构脂质的研究现状,提出了猪油脂生物转化研究的发展方向。The research status on the biotransformation of lard to prepare structured lipids at home and a- broad was summarized in the respects of acid hydrolysis of microbial lipase, transesterification, hydrolysis, alcoholysis, and esterifieation, etc. The development direction of research on the biotransformation of lard was discussed.
