摘　　要：目的 :充分利用鳗鱼资源。方法 :采用酶解法分离鳗鱼头中氨基酸、鱼油和多糖并分别进行了精制。结果 :鳗鱼头中含有大量氨基酸、饱和脂肪酸、不饱和脂肪酸及少量多糖。结论OBJECTIVE:To make full use of the resourus of eel.METHODS:Amino acid,fish oil and polysaccharide were one by one isolated and refined from the head of eel by enzymatic hydrolytic methods.RESULTS:There are a great quantity of amino acid,saturated fatty acid,unsaturated fatty acid and a small amount of polysaccharide in the head of eel.CONCLUSION:We can open up broad prospects for the head of eel.
