赤藓糖醇发酵后废弃酵母制备酵母浸膏的研究

摘　　要：酵母浸膏营养丰富,在医药制品、生物工程、科研、食品添加剂、调味品等多方面有重要用途。本文以赤藓糖醇发酵后废弃酵母为原料制备酵母浸膏,所得成品的感官指标和理化指标与常规酵母浸膏接近。利用成品代替常规酵母浸膏作为发酵培养基的营养元素,进行葡萄糖发酵,葡萄糖有消耗,但与品牌酵母浸膏相比还有一定的差距。本研究工艺简单、易于推广,对于开发发酵废弃酵母应用具有重要意义。Yeast extract -sodium is very nutritious. It is useful in the pharmaceutical products and biological engineering, scientific research, and flavoring food additives, etc. This article is about the preparation of yeast extract - sodium using abandoned erythritol - producing yeast. The sense perception and typical analysis of product are similar to usual. Use the product as a kind of nutrition for glucose fermentation instated usual yeast extract - sodium, the fermentability of the product is just a little bit worse. This paper is significant to developer abandoned yeast.
