摘 要:目的了解桂林市售食品污染水平和变化情况,对全市食品安全状况进行评价,为研究食源性疾病的流行规律制定防控策略提供基础数据和科学依据。方法按照{2012年食源性致病菌监测工作手册》的要求,采用细菌培养方法检测金黄色葡萄球菌等9种常见食源性疾病的致病菌,统计分析2012年1~12月市场销售食品中致病菌的特点。结果监测标本共381份,从8份标本中检出致病菌4种,检出阳性率2.10%。检出的致病菌分别是金黄色葡萄球菌1株,蜡样芽孢杆菌1株,阪崎肠杆菌5株,副溶血性弧菌1株。8份阳性标本分别从肉制品、生食动物性水产品、焙烤食品及婴幼儿食品中检出,其中婴幼儿食品中5份阳性标本均检出阪崎肠杆菌。结论桂林市居民主要购物和餐饮服务场所的部分即食食品存在致病菌污染,是引发食源性疾病的重要危险因素。Objective To understand foods pollution level sold in Guilin and changes,to evaluate food safety status and provide essential data and scientific basis for formulating prevention strategic of analyzing epidemic trends of foodborne disease. Methods According to 2012 workbook of foodborne pathogenic bacteria surveillance,detected 9 common pathogenic bacteria of foodborne disease including staphylococcus aureus by bacterial culture and analyzed the charac- ters of pathogenic bacteria in food sold on market from January to December in 2012. Results Tested 381 samples, and detected 4 kinds of pathogenic bacteria in which the positive rate was 2.10% from 8 samples. Pathogenic bacteria are 1 strain of staphylococcus aureus, 1 strain of bacillus cereus, 5 strains of enterobacter sakazakii, 1 strain of vibrio parahaemolyticus.8 positive samples were detected from meat products,raw animal aquatic products,bakery products and infant food.Among 8 positive samples, 5 samples from infant food and all these were detected enterobaeter sakaza- kii. Conclusion The factor that some instant food in the main shopping and catering service places in Guilin are pal- luted by pathogenic bacteria is the most significant hazard in causing foodborne disease.
