摘 要:以餐厨垃圾作为原料,利用混合菌种对其进行固态发酵,转化为菌体蛋白饲料,从而为餐厨垃圾资源化提供一条有益的途径。本试验以发酵时间、发酵温度、基质初始含水率、添加菌种量进行4因素3水平正交试验,最佳工艺条件为发酵时间2d,发酵温度30℃,基质初始含水率70%,添加菌种量0.031 25%。按最佳条件发酵餐厨垃圾,最终所得产物粗蛋白质质量分数为28.74%,蛋白质含量已达到蛋白饲料标准的要求。Food waste was transformed into protein feed by mixed bacteria culture in solid state fermentation, which provided a safe and useful way for the reutilization of food waste. An orthogonal test of 4 factors 3 levels design was applied to confirm the optimum condition of fermentation. The four factors were fermentation time, fermentation temperature, matrix initial water content and the amount of inoculums. The optimum conditions were as follows: fermentation time 2 d, fermentation tempera- ture 30℃, initial water content 70% and the amount of inoculums 0. 031 25 %. Under the condition,the crude protein content reached 28.74 %, which was in line with the requirements of the standard protein feed.
