茶油色泽测定及脱色工艺的研究

摘　　要：研究了茶油机榨油、精炼油和超临界 CO2 萃取油在可见光区的吸收光谱 ,分光光度法测色和罗维朋比色法之间的关系 ;并采用正交试验法对活性白土用量、脱色温度和时间对机榨茶油毛油品质及色泽的影响进行了研究 .结果表明 :毛油在 5 2 0 nm处有吸收峰 ,该峰随油色变浅而消失 .茶油在罗维朋红值特征吸收波长 5 3 5 nm处的吸光值与罗维朋红值有线性关系 ,其相关系数为0 .986.最佳脱色条件是活性白土用量 8% ,12 0℃ ,2 0 min.随白土用量的增加 ,时间的延长和温度的升高 ,茶油的酸值和羰基价有上升的趋势 ,而过氧化值和磷脂含量有下降的趋势 ,但在试验条件范围内 ,酸值和羰基值低于 GB11765 -89和 GB2 716-88的要求 .In this paper, the spectral of the crude oil expressed by hydraulic expeller, refined oil and supercritical CO 2 extracted oil of oil tea camellia seed were studied.The effects of active clay amount,bleaching temperature and time on the color and quality of oil were also studied by the orthogonal experiment.The results show that the crude oil has an absorbing peak at 520 nm in the visible light district,but this peak disappears when the color becomes lighter.There is a linear relationship between the absorbing value at 535 nm of Lovibond red's absorbing wavelength and the value of Lovibond red.The regressive coeficient is 0.986.The optimum bleaching conditions of active clay are: using 8% of active clay at 120℃ for 20 min.The acid value and carbonyl value increase, but the peroxidative value and phospholipids content reduce. Within the range of experimental conditions,the acid value and carbonyl value are lower than those of GB11765-89 and GB2716-88.
