摘 要:中西方饮食文化在饮食理念、饮食内容、烹饪方式、菜肴名称等方面存在差异。中餐菜肴名称英译应坚持还原菜肴本来面目、忠实译出菜品、正确处理文化信息、适当保留文化特色菜肴名称等原则。可使用着重口感、着重烹饪方法、着重刀法、着重人名/地名、按照音译的方法来翻译。There are many differences between Chinese and western food cultures in dietary concept, dietary content, cooking methods, and dish names. The translation of Chinese dish names adhere to such principles as : restoring the true faces of the dishes; faithfully translating the dishes; correctly handling the cultural information; and properly insisting on the names with cultural features. Such dishes can be translated according to their tasting, cooking methods, knife methods, names of people or places. They can also be transliterated.
