摘  要:目的了解绵阳市各类食品中食源性致病菌的污染状况,寻找可能引起食源性疾病的高危食品,为有效预防食源性疾病提供科学依据。方法按照国家标准方法和全国食源性疾病监测手册,对7项食源性致病菌进行分离与鉴定。结果 2011-2012年共抽检食品样品540件,45份样品检出致病菌,总检出率为8.33%,检出致病菌45株,其中蜡样芽胞杆菌22株,金黄色葡萄球菌10株,单核细胞增生李斯特菌7株,沙门菌5株,阪崎肠杆菌1株。结论 2011-2012年绵阳市熟制米面制品和婴幼儿食品的致病菌检出率较高,蜡样芽胞杆菌,金黄色葡萄球菌的污染较为严重,对此应引起重视。Objective To better understand the contamination status of food-borne pathogens in various food sold in Mianyang market and to find out the high-risk food,so as to provide the scientific basis for effective prevention of food-borne diseases. Methods Pursuant to the method of national standard and the food-borne pathogen detection manual,seven categories of foodborne pathogens were separated and identified. Results Out of 540food samples tested,45 were positive for pathogenic bacteria with the overall positive rate of 8.33%.45stains of bacteria were isolated,including 22of Bacillus cereus,10of Staphylococcus aureus,7of Listeria monocytogenes,5of Salmonella and 1of Enterobacter sakazakii. Conclusions The positive rate of pathogen is high in cooked rice products and infant food,and Bacillus cereus and Staphylococcus aureus are major pathogenic bacteria in food sold in Mianyang market.
